Lewis, a native Londoner, discovered his passion for food while studying advertising. Drawn to the fast-paced energy of professional kitchens, he spent every spare moment working as a grill chef, laying the foundation for a career in the culinary arts.

After graduating, Lewis moved to Lyon, France, and later to the alpine village of Montgenèvre, where he immersed himself in the techniques and traditions of French cuisine. Over two years, he honed his craft in brasseries, fine-dining restaurants, and five-star hotels, gaining a deep appreciation for both precision and creativity in the kitchen.

Returning to London with renewed enthusiasm, Lewis became the owner of The Duchess, an independent pub in Battersea.

There, he developed menus, curated drinks, and crafted a welcoming atmosphere that reflected his own tastes and culinary style. Inspired by London’s thriving street food scene and the rise of single-concept restaurants, Lewis began refining his focus: to perfect one dish at a time, celebrating simplicity and quality.

His curiosity led him to experiment with hot and cold smoking techniques, incorporating them into his menus and shaping his signature approach to flavor. In 2012, Lewis founded Chuck Burgers and HOTBOX, overseeing everything from concept development to launch and establishing a beloved East London BBQ destination.

Over the last decade, Lewis has served as a creative consultant on a dozen high-profile hospitality projects while continuing to grow his own brands, including Chuck Burgers and Elote Tacos. Today, his work blends innovation with authenticity, bringing bold flavors and memorable dining experiences to every table.
