A native of London, Lewis found his calling to cuisine whilst studying advertising, he began working all his free hours in a kitchen as a grill chef, starting his new career.
Upon graduation Lewis moved to Lyon, France then on to the mountains of Montgenèvre to embark on an ambition to learn the skills of the trade and specifically French cuisine. Working for brasseries, fine dinning restaurants and 5 star hotels whilst he was there.
Two years later a return to London encouraged an emboldened passion for food and he became the owner of the independent Duchess pub in Battersea, giving him the opportunity to explore menus, drinks and ambiance to his own taste.
Whilst Inspired by street food and single concept restaurants in London the aim then became to focus on more niche staples, one dish at the best it can be.
Lewis began to focus on hot and cold smoked meats as an integral part of his menus.
In 2012 Lewis founded Chuck Burgers & HOTBOX from everything from the initial concept to launch and open their East London bbq joint.
Over the last decade Lewis has been the main creative consultant on a dozen high profile projects along side developing his own brands; Chuck Burger & elote tacos
